Mission
“Kaiseki” is often introduced as a traditional or authentic Japanese cuisine and it is true because “Kaiseki” was established back in about 400 years ago. However, “Kaiseki” has been changing in many ways and is still changing, which means that “Kaiseki” is a very modern cuisine as well.
What I am trying to create here in Seattle is also a very modern “Kaiseki” which is for people in Northwest to enjoy local ingredeints while having a new experience in Japanese cuisine. I call my food “Northwest Kaiseki” which you can eat only here in Seattle.
