What is "KAISEKI" ?
"Kaiseki” is a multi-course Japanese haute cuisine featuring seasonal ingredients cooked in a variety of cooking methods. Several dishes are served in order and each individual dish is usually small and carefully balanced.
“Kaiseki” was originally a light course meal before tea ceremony in order to enjoy tea the best back in about 400 years ago. Then it was fused with a fancy meal served at restaurants to enjoy drinking alcohol and became a current “Kaiseki” course meal. After Edo era (about 200 years ago), all the Japanese cuisine technique, the sprit of tea ceremony, such as the hospitality to pay attention to all the details of bowls and plates to serve tea and sweets, and seasonal flowers to display in the room just for guests to enjoy the moment of tea ceremony and beautiful presentation on each plate representing season and cultural events were all combined and became a current style of “Kaiseki”.
